Fresh Blackcurrants for sale.
I have a few kilos of fresh blackcurrants going if anyone is looking to buy some for eating fresh or making into jam, chutney, cordial or wine. Picked fresh to order. Available for the next week or so only.

Blackcurrant Chutney Recipe.
Makes 10x 250ml. jars.
1 kg. fresh whole blackcurrants
1kg. soft brown sugar
500ml red or white wine vinegar
2 medium red onions, finely chopped
2 large cloves garlic, finely grated
3 inch piece of fresh ginger, peeled & finely grated
250g. raisins, chopped
4 heaped teaspoons of wholegrain mustard
2 tsp. salt
Black pepper to taste.
If water bath canning, start your water to boil in your canning pan or a large stock pot using a folded tea towel at the bottom to protect the bottoms of the jars. Combine all ingredients into a large pan & bring to a boil. Boil chutney for approximately 25 minutes, stirring occasionally. Get your jars & sealing lids & rings ready while it cooks. Remove from heat & immediately ladle into jars with jam funnel leaving a ¼ inch gap of space from the top of jar. Seal jars with lids & rings as you go. Water in the canning pan or stock pot should be at a rolling boil by now. Process jars for 10 minutes at a rolling boil with pot lid on for 250ml jars & 20 minutes if using 500ml jars. Remove with tongs & wait a few minutes for your seals to “pop” & seal shut. Reprocess any immediately that fail to seal in the 1st round. Leave overnight to completely cool. Rings can now be removed & jars can be stored with just the sealing lid on. Shelf life is 2 years if kept in a cool, dark cupboard.
